		<description>You can definitely use lemon juice (it just takes a lot of lemons.) That&#039;s actually probably more traditional, although everyone in Israel seems to use citric acid. Then again, everyone in Israel also uses parve stock powder, so...go know. I wouldn&#039;t use white vinegar. It&#039;s acidic, but it doesn&#039;t have the right sourness.

If your beets have greens still attached, by all means use them, but chard is always used whether you&#039;re using beet greens or not.
